To make sure that our customers get only the freshest and most juicy seafood possible we incorporated MAP (Modified Atmosphere Packaging).

How does MAP Technology work?

MAP works by vacuuming first, then injecting CO2 mixture gas back into a sealed tray. The added CO2 not only lowers the surface area pH level and minimizes aerobic bacterial growth, it also reduces fat oxidization and slows enzymatic cellular deterioration. A high barrier lid stock and tray combination together with the gas flushing, creates the desired oxygen modified atmosphere that prolongs the freshness of the product.
