seafood possible we incorporated MAP (Modified Atmosphere Packaging).
| How does MAP Technology work? |

MAP works by vacuuming first, then injecting CO2 mixture gas back into a
sealed tray. The added CO2 not only lowers the surface area pH level and
minimizes aerobic bacterial growth, it also reduces fat oxidization and
slows enzymatic cellular deterioration.
A high barrier lid stock and tray combination together with the gas
flushing, creates the desired oxygen modified atmosphere that prolongs the
freshness of the product.
